Ivy Gourd is a tropical plant popularly cultivated and consumed in India, China, Malaysia and other Asian and African countries. It is known by several names, including baby watermelon, little gourd, Kundru, Tindora or Tindola (in Hindi), etc. You can prepare it as a dry, stir-fried vegetable or with a gravy.
Recipe
Wash and chop ivy gourd. Heat oil on a pan. Add mustard seeds and allow to splutter. Add asafoetida and dry chilli too. Saute. Then mix both the dals and curry leaves. When dals are brown add onion and fry till golden. Mix chopped ivy gourd, turmeric and salt. Cover and cook. Add dry ginger powder, dry mango powder, coconut powder and ground peanuts. Mix well to ensure coating of masala. Cook on low flame for 2 minutes more and Ivy gourd masala fry is ready to serve with rice/roti.
